 CREAM OF CARROT (4 servings)

Ingredients
§ 1 tablespoon margarine
§ ½ kg carrots
§ 3 medium potatoes
§ 1 onion, finely chopped
§ 4 cups defatted chicken broth
§ pepper and tarragon to taste
§ a little cream
§ finally some sprigs of parsley chopped for garnish
Preparation:
Place in a pan spoon of margarine and saute it ½ kg carrots with chopped onion until soft carrots.
Then add the four cups defatted chicken broth along with three boiled potatoes.
Season with pepper and tarragon and heat to simmer for 10 minutes. Put in blender and grind. Mix cream to achieve the desired texture. Garnish with a little parsley once served on the plate.

 
RICE SALAD WITH NUTS

Ingredients
§ 1 cup rice
§ salt and a pinch of fresh mint
§ sufficient water
§ 5 tangerines, peeled
§ 3 onions
§ ½ cup of sunflower seeds or chopped almonds, black pepper
§ 3 tablespoons light mayonnaise
 Preparation

COLESLAW (4 servings)

Ingredients:
§ 500 grams of cabbage
§ 2 carrots
§ 2 apples golden (yellow)
§ 2 stalks celery
§ 1 small onion
§ ½ cup walnuts
§ some branches of watercress (to taste)
§ 6 tablespoons yogurt dressing
§ pepper to taste
Preparation:
Put shredded cabbage in a deep bowl.
Add two shredded carrots, two apples cut in small cubes, and celery and small onion grated. Mix.
Add chopped nuts. Mix six tablespoons of the dressing of yogurt and season with pepper.
Garnish with watercress.

 
VEGETABLE SALAD
